Breakfast that tastes good, with added health benefits is always a win win. For me I am the cumberland sausage and scrambled eggs type of girl, I've never really been into cereal, however, with that said... I unfortunately in this cruel world, can not have sausages and eggs every morning. Sad.

In my quest for healthier breakfast options, I cam across these magical little things called chia seeds. They're high in antioxidants which cleanse you, fighting illnesses and some diseases, great source of omega-3 fatty acids, and generous in fibre, iron and calcium! If this isn't a superfood, then I do not know what is.
Warning though, the texture is quite peculiar and may not be to everyones tasting, I once got told they look like fish eggs. :\ but do not let that put you off. The only downside is, chia seed pudding isn't something you can want and have straight away, it is made over night, however, I absolutely adore these tiny little bursts of goodness and I am sure you will too. Try my recipe below and let me know how you get on.

Serves:1
Ingredients:
2 tbsp Chia Seeds
1/2 cups Coconut Milk
Mixed Nuts & Seeds
Organic Honey
Method:
First take 2 tbsp of chia seeds and pour into a bowl and add 1/2 a cup of coconut milk. Cover with cling film and leave in the fridge over night. in the morning you should have a thick, consistency resembling a pudding like texture. Chia seeds swell up and gel when in moisture. Roast some nuts of your choice in the oven for 10 minutes. Once roasted and cooled, mix into a 1 spoon of organic honey, into the nuts. Serve with chia pudding and enjoy!
