So last night, a Wednesday night, I made a "Sunday" roast. I did this a couple years ago too, again on a Wednesday night according to my Instagram archives. Are Wednesdays the new roast days? Who knows, however when it comes to my kitchen, there are no rules!
Thankfully I still have the pictures from a few years back, because last night the lighting was pretty rubbish and in all honesty was too tired to work the chicken's angles. (I had a long stressful day at uni).

Whole Chicken 2x Maggi Cubes 2x Garlic Cloves 2x Lemons Fresh Thyme, Rosemary & Sage Black Coarse Pepper Garlic Pepper Walnut oil
Method: Pre-Heat oven:
Fan oven: 200 Degrees
Gas oven: Gas mark 7
Clean chicken by rinsing with cold water and removing any excess hairs. Take one lemon, slice and rub all over and inside the chicken. Leave one half of lemon inside the chicken. In a pestle and mortar, add all the seasonings and spices, chopped garlic, pulled leaves from herb stalks and grind everything together. Add 4tbsp of walnut oil to mix and grind together for 30sec - 1 minute. Using a sharp knife, poke holes into the flesh and begin to rub the seasoning mix into the skin, under the skin and into the flesh of the chicken. Once fully marinated, squeeze one half of lemon onto the chicken. Leave to sit for 10 minutes before placing into the oven. Roast for 1hr 30minutes and serve.
