Gluten and Dairy-Free Sweet & Savoury Pancakes

The question on Instagram all day today, as its Pancake Day was "Sweet or Savoury"?

Personally I think that question is a crime. Pancakes should always Sweet AND Savoury. Well today I fancied something more on the savoury side, however, as always, I made sure there was an element of sweet added. Keep scrolling to find out!



This tower of fluffy goodness was as delectable as it looks! Gluten and dairy-free Fluffy American Style Pancakes layered with my homemade spicy guacamole, peppery leaves, and (the sweet element) maple syrup marinated bacon. Scroll down for the full recipe.




Prep Time: 10 mins

Cooking Time: 3 mins

Serves: 6-7 small-medium pancakes



Ingredients


1 1/2 cups self raising gluten free flour

1 tsp baking powder

3 eggs

1/2 cup oat milk

1 tbsp brown sugar

Pinch of cinnamon

Pinch of Black Pepper

Oil or butter



What you'll need:


A balloon whisk

Hand mixer

2 mixing bowls

Spatulas

Non-stick frying pan or cast iron

Sieve




Method:


In the first mixing bowl, sieve in the flour and baking powder and mix

with the balloon whisk.


Next add 1 egg yolk and the oat milk. Mix with the balloon whisk until all parts have combined.

If your batter seems to watery or thick, add small amounts of flour or milk to gain desired

thickness. Then set aside.


In the second bowl, add two egg whites and sugar together and using a hand mixer on

high speed whisk until white and fluffy. The mix should hold as if you were to make meringues.

Next you want to add your egg white and sugar mix to your other bowl of pancake batter.

Using the balloon whisk mix everything together carefully but avoid

over mixing.


Finally heat up your pan with butter or oil and scoop in small sections of your pancake mix.

Cook for 1-2 minutes on each side. Repeat until batter is finished

and serve with my Spicy Guacamole and maple bacon.


For the maple bacon all you have to do is rest slices of quality bacon in maple

syrup seasoned with cinnamon and black pepper for five minutes before frying.

You can use turkey bacon as an alternative or smoked salmon if you don't eat meat.
