For a long time I stopped eating it and was unapologetically enjoying its unhealthier counterpart, however, one day the love was reignited when I was in the kitchen cooking up some really good fried chicken, it just didn't feel right having white potatoes with fried chicken, my conscious was kicking me in the gut and I needed a balance. Sweet potato wedges were the answer!
Prep Time: 5-10 mins
Cooking Time: 25 mins
4 large Sweet Potato
Pink Himalayan Salt
Preheat oven to gas mark 7. Rinse off sweet potato thoroughly and slice into wedges with skin on. Place onto a baking tray, season with black pepper, pink himalayan salt,mixed herbs (dry or fresh), then drizzle about 2tbsp of olive oil over the wedges. Bake for 25 minutes and serve.
