Sharing this delicious recipe again because for one I'm craving it and I don't know about you but this week has been crazy!!! and I'm sure you and your family could do with a lovely wholesome roast for Sunday Dinner. This is my Lemon Garlic and Herb Roast Chicken smothered with this spicy homemade Chimichuri sauce made with fresh herbs, garlic and green birds eye chilli's. You're yet to taste anything like this I guarantee!

Ingredients:
Whole Chicken
Mortar and Pestle
1 Tbsp Dried onion
Pinch of salt and pepper to taste
Chilli flakes to taste
All purpose/Everyday seasoning
Peppercorn
2 Garlic cloves
3 Chicken stock cubes
Olive Oil
Curly Parsley
Fresh Thyme
Rosemary
A whole lemon
Zest of a lemon
Ingredients:
Large Bunch Parsley
6 Small Green Chilli's
1 Large Spring Onion
2-3 Garlic Cloves
1/2 tsp Pink Himalayan Salt
2 tbsp White Wine Vinegar or Lemon Juice
4tbsp of Walnut Oil or Olive Oil
Method
Preheat oven to gas mark 7 or 200 degrees
Clean chicken by rinsing with cold water and removing any excess hairs.
In the mortar and pestle, and some dried onions, Pinch of salt, Chilli flakes, All purpose/Everyday seasoning, Peppercorn, 2 minced garlic cloves, 3 chicken stock cubes, Olive Oil and grind
Next you want to chop fresh Parsley, fresh Thyme and Rosemary and add it to the mortar
Add some lemon zest also to the mortar and continue to grind it in order to combine all of the ingredients
Poke some holes in your washed chicken (you can wash your chicken using apple cider vinegar and lemon) so the marinade can seep into the flesh
Rub the marinade into the chicken, ensuring you cover each area as much as possible. For better coverage, press the marinade into the skin and under the skin
Drizzle half a lemon over your chicken and finish off by adding some lemon zest
With the other half of the lemon, place it inside of your chicken
Place the chicken in the oven on 200 degrees for 1hour 45minutes
To dress the chicken, add some Chimichurri all over it and finish off with some herbs and juice of a lemon
