Mango + Dairy-Free Feta Salad

I need to find myself @waitroseandpartners and pick up a juicy mango this afternoon because I want my Mango and @violife_foods (vegan) Feta for lunch! It's so simple to make and I've listed the ingredients and easy method below!



Mixed leaf salad (chopped roughly)

Mango (chopped)

Feta ( I used Vegan @violife_foods)


Olive Oil

Fresh Lemon Juice

Garlic (crushed)

Salt (to taste)

Black pepper (to taste)

Parsley ( fresh, dry or frozen)



Wash your mixed salad leaves and chop roughly, add your chopped mango and crumble the feta cheese.

For the dressing, in a bowl add olive oil, fresh lemon juice, crushed garlic, salt and pepper to taste, fresh, dry or frozen parsley and mix then drizzle over your salad. Voila ! I find that this salad bangs with my Honey Salmon recipe.
