So guys, who remembers my Bulgar Wheat Jollof recipe in aid of #WorldJollofDay a few months back? (See recipe here) It was served with bbq jerk pork (recipe coming soon) and this sweet, refreshing mango salsa that is simply so easy to make.

Prep Time: 5 - 10 minutes
Cooking Time: 0
Serves: 8
Ingredients
2x Ripe Mango
1x Red Onion
1x Lime
1/2 handful of Coriander
1/2 handful of Parsley
A pinch of Black Pepper
A pinch of Pink Himalayan Salt
Method:
Finely dice the red onions (as small as possible)
Peel mango and dice into medium sized chunks
Chop fresh herbs and add into a salad bowl
Add onions and mango into the salad bowl
Sprinkle in black pepper and salt (to taste), squeeze in whole lime and mix with or spoon.

Serving suggestion: Bulgar Wheat Jollof Rice with Jerk Pork
This is a very versatile side dish, you can add or take away ingredients, serve with corn chips, guacamole, add to a salad, have it with a rice dish, I mean the possibilities are endless! lol.
