
So Ozias and I spent an afternoon making Plantain, Guava and Apple Bread. I really wanted banana bread but our bananas weren't ripe enough, but we did have some really ripe guavas that hubby picked up from our local fruit and veg store, so it made sense to experiment with them. The flavours and the smell are totally sensational, can't wait for you guys to try it with your little ones. Scroll down for full recipe.
Prep Time: 10/15 mins
Baking Time: 70 mins
Serves: 10/12 slices
Ingredients:
1.5 cup unsalted melted dairy free butter
1 cup organic Coconut or Mascavo sugar
2 large organic eggs
1 tsp vanilla extract
2 cups Self-Raising gluten-free flour
1 ripe plantain
2 ripe Guavas
2 apples, peeled
Oats to garnish
What you'll need:
9x5-inch Baking Pan
Non-Stick Baking Paper
Large Mixing Bowl
Balloon Whisk
Measuring cup
Food processor
Pre-Heat Oven:
Gas: Gas Mark 4
Fan: 180°C, 350°F

Method:
Start by adding chopped plantain, guava and apples into the food processor and pulse till pureed. It's ok if there are lumps or none at all.
In a measuring cup add in your melted butter.
If still hot, let it cool slightly before the next step.
Next you want to whisk the coconut sugar, eggs and vanilla extract into the butter for about a minute or two.
In another large mixing bowl add the flour, baking soda and then pour in the egg mixture.
You don't need to whisk, just stir and mix with a spatula.
Once the egg mixture and flour is fully combined, fold the plantain mix into your loaf mixture.
In your baking pan, place in the baking paper and pour in the loaf mixture. Finally sprinkle over some oat flakes.
Your plantain bread mix is now ready for the oven. Place in the oven for 70 minutes. Once the time is up, test your loaf is cooked through by poking with a knife or toothpick. The knife/toothpick should come out dry with no wet batter mixture. Enjoy with a warm cuppa.
