Finally got round to using mine the other day and I made the most incredible Plantain, Sweet Potato and Butternut Squash Soup. I roasted my veg for extra flavour but note that the Soup Maker can still cook the veg for you, which is brilliant! As busy mum, I would like lunchtimes to be a bit more efficient so it's usually a meal from the night before, however, I loved that I could make a hearty lunch, that my son could also enjoy in under 21 minutes using The Soup Maker. You can literally throw all your ingredients in, select your preferred mode and leave it to work its magic! It cooks and it blends, and is also great for making curry and pasta sauces! Mate! 1 Large Plantain
2 Sweet Potatoes
1/4 Butternut Squash
3 Spring Onion
2 Garlic Clove
4 Vegetable Stock Cubes
Chopped Parsley (dry)
Salt and Pepper (to taste)
Fresh herbs (to garnish)
Pre-heat oven 170 degrees
Chop the veg and place onto a baking tray lined with parchment paper.
Spray or drizzle olive oil over veg and season accordingly. Bake for approximately 15 minutes.
Next in a jug add 800ml of hot water, drop in stock cubes and mixed till dissolved. Once your veg has roasted, add into the Soup Maker and pour in the vegetable stock. Mix well then pop the lid on.
Select your preferred mode and sit back and relax, or mop the floor, wash dishes, tidy up after your baby or whatever. The machine will let you know when it's done so by the end of this you could have chunky or smooth soup depending on the mode you selected.
Garnish with herbs and chilli and enjoy!
Not done yet, it even has a cleaning mode *cries* !
