Bought a box of free range Duck Eggs from, Posh Birds also available at Costco, just because I wanted to try something different. Not that they taste any different from chicken eggs, however I was semi hoping they would, just for the sake of experience.

Anyway this no brainer recipe was a delight! The honey roasted paprika parsnips gave this meal the right sweet and savoury balance I always seem to crave for. If you're not a pork eater try this dish with steak which I usually opt for, but again I am all about experiences, so I tried something different.

Ingredients:
Pork Chops (or Steak)
Free range duck eggs
Parsnips
Pink Himalayan Salt
Pepper
Paprika
Garlic granules
Dried herbs
Organic lemon
Organic Coconut Oil
Method:
Parsnips
First thing is to pre-heat your oven to gas mark 7 and then proceed in peeling the parsnips. Once fully peeled, rinse off and slice into thin slices, resembling french fries. Place onto a baking tray, season with salt, pepper, dried rosemary, and paprika, then drizzle with honey. Pop into the oven for 15 minutes, checking regularly and tossing.
Pork Chop
In a bowl, rinse the pork chop in the sink and then drizzle the juice from and rub down the meat with a fresh lemon. Season the chop to your tasting, I just used, pink Himalayan salt, black pepper, dried herbs and garlic granules. Once seasoned, heat up a grill pan, use half a tsp of coconut oil and wait till hot before adding your meat to grill. Grill for approximately 7 minutes on each side on a medium to high heat, making sure pork is cooked all the way through, (steak varies).
Duck egg
Heat up an egg sized frying pan with coconut oil on a medium heat, and break the egg into the pan. Sprinkle a pinch of black pepper and chilli flakes whilst frying.
