Here's another breakfast dish for you guys. This is an old favourite of mine that makes making breakfast a little bit more exciting, Potato Pancakes topped with poached egg, garnished with chives, served with a side of grilled cherry tomatoes on the vine.

Prep Time: 10 mins
Cooking Time: 25 minutes
Serves: 2
Ingredients:
2 Large Potatoes
2 Free Range Eggs
15g Feta cheese
2 Slices of Smoked bacon
1 Garlic Clove
Pinch of Chopped Chives
Salt & Pepper
1/2 tsp Coconut oil
Method:
Cut potatoes into a pan of water and boil for 15 minutes till potatoes are soft enough to mash.
Grill slices of bacon till cooked through and the cut into little pieces.
Whisk eggs in a bowl then crumble in feta cheese, chopped bacon, chopped garlic clove, chives and add salt & pepper to taste.
Once potatoes are cooked and soft, mash and add to egg mix.
Heat a pancake pan with coconut oil and add mix to make potatoes pancakes, fry for 2-3 minutes on each side.
