There are times I step into kitchen to really experiment, like the aim is for my tastebuds to solely experience something new. This was one of those days. Have you ever tried Raspberry and Passion Fruit BBQ Prawn Skewers before? I think not! Aren't you blessed to be following a sharing soul like me who is kindly giving away all her tasty secrets? I think yes!

I will apologise in advance however, on this day I had a last minute appointment so I had to rush my way through this recipe and completely forgot to take step by step images to guide you through this recipe. So with that said I will make it again and update this post accordingly. But if you don't need it, lets scrap the chit chat and get stuck in!

Ingredients:
330g or 2 packs of Raw Jumbo King Prawns
125g Organic Raspberries
1 Passion Fruit
1 tbsp BBQ Seasoning
1 tsp Paprika
1/4 Black Pepper
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
2 tbs Honey
1/2 tbsp Fish Sauce
4 tbsp Coconut Sugar
2 tbsp Sesame Seed Oil
Fresh Herbs to garnish
What you need:
Medium Sized Sauce Pan
Griddle or Grill Pan
Wooden Skewers
Pestle and Mortar
Pastry Brush
Potato Masher
Spatula
Large Bowl
Sharp Knife
Method:
In a large bowl, pour in your raspberries and mash for 2 minutes with the potato masher.
Cut your passion fruit in half, scoop the flesh out into the bowl and mix the fruits together with a spoon. Drain away any excess liquid.
Next you want to add the coconut sugar into a sauce pan, heat on a medium heat and stir till the sugar grains have melted.
Now lower the heat and cook till sugar begins to caramelise and bubble.
Then add the fruit and mix well. Cook for 5-8 minutes and then leave to cool.
Take your pestle and mortar and add the BBQ seasoning, black pepper, garlic powder, onion powder, honey and fish sauce. Mix well. If too thick, add sesame seed oil.
Once your fruit mix has cooled, add it to your marinade and mix thoroughly.
Take your prawns, devein and clean where necessary, rinse off and drain.
Using the pastry brush, marinate your prawns with your raspberry and passion fruit
BBQ marinade and skew.
Heat up the griddle/grill pan with sesame seed oil and grill each side of the prawn skewers for 5-7 mins.
Garnish with fresh herbs and serve.
