If you're anything like me, living with a constant hectic schedule, you'll appreciate anything healthy and quick! This is breakfast made and served in 10 minutes and probably scoffed down in 2!. Smoked salmon on a bed of sautéed garlic and butter spinach a side of avocado, topped with a poached egg.
TIP: For the best results when poaching eggs, add 1 tbsp of lemon juice or vineger to a simmering pan of hot water before adding egg to poach.

Bring a pan of water to boil but with simmering bubbles, not boiling and add 1 tbsp of vinegar or lemon. You then want to carefully crack the egg into the hot water and then just leave it. Do not stir, mix or touch the egg whilst in the water. Leave to cook for three minutes.
Whilst the egg is poaching, melt butter in a pan with chopped garlic and black pepper. Once melted add fresh baby spinach leaves and toss lightly until leaves have wilted.
By now the egg should be ready, carefully scoop egg from water with a large serving spoon and drain into kitchen towel. You can now plate up your spinach, poached egg with the smoked salmon & avocado. Sprinkle chilli flakes and crushed black pepper over the top and serve.
