Recently I was craving plantain crisp (tbh when am I not craving plantain crisp), I've been eating them since I was knee high, however most brands fry the plantain to get that extra crispiness, so I challenged myself to make them at home, but a baked version. And thankfully they came out no to bad, Some stayed quite soft whilst others managed to crisp really well.

TIP: Use green to yellow coloured plantain, any sign of over ripeness won't allow the plantain to crisp.
Prep Time: 5 minutes
Cook time: 20 - 25 minutes
Serves: 4
Ingredients:
1 Plantain
Chilli Flakes
Pink Himalayan Salt
Paprika
Olive Oil
Method:
Pre-heat oven to gas mark 7 and lay baking paper (avoid foil paper) onto a baking tray.
Cut plantain in half vertically and horizontally. Slice the four pieces into thin slices.
Drizzle olive oil onto baking paper and careful place the thin slices of plantain onto the tray.
Season with chilli, salt, paprika and drizzle with olive oil again.
Place into oven for 20-25 minutes to bake.
Serve with Spicy Guacamole
