Just when you thought you could never enjoy a creamy bowl macaroni and cheese ever again!. So if you don't know and a few do still ask, I try my hardest to avoid eating gluten (wheat-based foods) and dairy for various reasons but mainly because of skin allergies. I suffer from eczema and psoriasis, after doing an allergy test years ago my results came back that I had mild allergies to the above. However, That didn't deter me as much, although I stopped consuming cows milk years before, I'd still eat cheese and was definitely not turning down the Turkish bread at the restaurant. I also found dairy AND gluten-free products the hardest things to come by in the supermarket. A lot of the time it's one or the other and you have to do a lot of trial and error because some things taste like paper.
Anyway, yesterday I was on a mission to curate THE BEST vegan (if you don't add the shrimp) macaroni and cheese. I've tried and tested a few of my own variations before but I have never been left satisfied. I missed the creaminess that you'd get using fresh cream and mascarpone. However yesterday I could have wept into the bowl I was eating because the vegan variation I made was everything I wanted a dairy-free bowl of mac n cheese to be!
