I had so much fun creating these fluffy pancakes, confession however, there was meant to be three but I just a little bit too much batter mix for the final pancake, and as opposed to just using the amount needed, I poured the whole thing into the frying pan. In the end it was just this massive, lumpy doughy pancake. FAIL!
Well the good news is, I learnt from it and two out of three ain't so bad. Enjoy this simple but affective breakfast/brunch pancake recipe topped with coconut & almond butter, blueberries and bananas.
TIP: "For fluffy pancakes, use self raising flour..."
