Ever been stuck on what to do with overly ripe banana's? If you've read my previous posts, you'll know, that for me, wastage is a no no. I will literally try and salvage anything as long as it hasn't expired. A lot of people believe that over ripe banana's have expired and throw them in the bin, but what they don't know is that they actually make the BEST banana flavoured desserts.
Caramelised Baked Banana's with Pistachio Nuts served with Fresh Cream
So yesterday, I went ahead and used the last two banana's in the house, and as usual my mum was ready to throw them away, but I had to stop her dead in her tracks. lol. There was a sad little plum on the side of the fruit bowl also and thought "I'll use you too"...
I served mine with a few grains of granola, single fresh cream, whipped with marscapone to make a light fluffy cream. It was melt in your mouth, get in my bely now! Can I have you all over again, divine! Its a very versatile dish, which can actually be served as a breakfast or a dessert.
Prep Time: 5 minutes
Cooking Time: 12 minutes
2 over ripe Organic Banana's
1/2tsp Organic Coconut Sugar
2tsp Organic Honey
3 drops of Vanilla Essence
1/2 tsp Cinnamon
Preheat the oven, and set to gas mark 7.
Leaving the skin on, slice banana's down the middle, long ways and place onto baking tray. Slice plumb and lay sporadically over banana's. Grind pistachio nuts in a mortar and pestle, not fine, but into crumbly pieces. Sprinkle over banana's.
Add the vanilla essence onto the banana's and nuts, squeeze over the honey, and the sprinkle coconut sugar, and cinnamon. Once done, pop straight into the oven for 12 minutes.
Once baked using a spoon, very gently scoop the banana flesh away from the skin (similar method to an avocado). Serve with cream, granola, yoghurt, ice cream or even brownies and ice cream, if you dare!
