I've been bit quiet recently as I have been busy planning my Brunch Club launch and really just taking some time to myself. Moving house can really throw you off your regular routine, especially your eating patterns, and I can admit I haven't been very good!
So I am back with this easy Organic Butternut Squash Cous-Cous Salad served alongside our Sunday BBQ! All organic ingredients are from Graig Organic Farms and you can get 10% off your order using my code ALEXIS10.
Prep Time: 10 mins
Cooking Time: 35 mins
Organic 1/2 Butternut Squash
1 Cup Cous-Cous
1 tsp Dried Parsley
1 tsp Mixed Herbs
1/2 tsp Black Pepper
1/2 tsp Paprika
1/2 tsp Garlic Granules or 1 Garlic Clove
1/2 Chilli Flakes
1 tbsp Olive Oil
1 Vegetable Stock
Start by peeling butternut squash, and chop into chunks and steam for 30 mins. In a bowl, pour in cous-cous, dried herbs, black pepper, paprika, Garlic, Chilli Flakes and vegetable stock.
Pour boiling water over the cous-cous until 1cm of water covers the top, stir all the ingredients together, cover bowl with cling film and leave to steam for 5-10 minutes.
Once squash has cooked, heat up a griddle pan, spray on some oil and grill the squash until you have charred lines.
Carefully remove cling film from the bowl of cous-cous, add the olive oil, squash, some rocket, fluff with a fork and serve.
